Food Allergies and Simple Servings
College is complicated enough; enjoying a meal at the resident dining hall shouldn't be. But choosing meals can present undue anxieties for the growing number of students who are arriving on college campuses with food allergies that can be dangerous-even fatal. According to the Centers for Disease Control and Prevention, teenagers and young adults with food allergies are at the highest risk of fatal food-induced anaphylaxis.
Simple Servings is Sodexo's solution to proactively address most of the ingredients that account for 90 percent of all food-allergy reactions: milk, eggs, wheat, soy, shellfish, peanuts, and tree nuts. Simple Servings also recognizes the current skyrocketing demand for gluten-free foods, which certain students may require out of medical necessity (celiac disease) or simply by choice. Simple Servings also appeals to students who prefer plain and simple foods and those with other health-related dietary concerns, such as Type I diabetes. With Simple Servings, students can comply with food allergy or other dietary concerns without feeling singled out. They won't have to go off campus for their meals or miss out on dining with their friends while waiting for the chef to specially prepare their meals. All foods offered at the Simple Serving station are naturally free of milk, eggs, wheat, soy, shellfish, peanuts, tree nuts and gluten. Straightforward preparation techniques assure transparency of ingredients, and help students prepare to be responsible for their own shopping and cooking in future. The lunch and dinner menu change daily and include varied protein options: beef, pork, chicken, and turkey. All side dishes are vegan, containing no milk, eggs, or meat products.

We take pride in serving you wholesome ingredients, preparing recipes accurately and providing nutritional analysis and ingredient statements through our online menus and nutrition calculator. From our general manager to our front line servers, we work carefully to address food allergies, celiac diets, or other special dietary needs. Separate equipment, storage areas, utensils and preparation areas minimize, but do not totally eliminate, the chances of gluten and allergens in our Simple Servings foods.

Our menu system provides ingredient statements specifically highlighting the big eight allergens: milk, eggs, shellfish, fish, tree nuts, peanuts, wheat, & soy. Guests may check on the presence of allergens prior to planning their meals using the online menu, Bite app, and nutrition calculator. The absence of an allergen listed on posted or electronic product signage is not a guarantee that the product is free of that allergen. The guest is responsible for communicating their allergy to a supervisor or manager to ensure safety.

Locate a healthier choice! All Mindful offerings meet stringent nutritional criteria based on the Dietary Guidelines for Americans. Each Mindful item is limited in calories, has fewer than 30% of calories from fat, fewer than 10% of calories from saturated fat, and is restricted in sodium and cholesterol.

Rochelle has a passion for preventative nutrition and focuses on helping students, employees, and the dining services staff develop a positive relationship with food. She also assists students with dietary restrictions ensuring they receive save, wholesome, and delicious meals in all of our dining services locations.
